PAESTUM:

Paestum (Poseidonia) was an important Greek colony in Campania in southern Italy and is the site of well-preserved Greek temples. Located about 80km south of Naples, Paestum is about 700m from the sea and just south of Sele river. The site saw human habitation as far back as the early Stone Age. Paestum was founded between 650 and 600 BC by colonists from the Italian city of Sybaris, which was itself a colony established in 720 near Croton on the Ionian Sea by Greeks from Troezen and Achaea. The city was called Poseidonia. Paestum contains some of the best-preserved and most important Greek temples in the ancient world. The city walls, with a perimeter of nearly 5 km, date to the 5th century BC. The so called Basilica is extremely well preserved. The adjoining temple, also dedicated to Hera is one of the best examples of Doric architecture. Paestum is an extremely important city for the study of ancient Greek architecture, south Italian tomb painting, Roman city planning, ancient religion, pottery and burial customs.


PAESTUM MUSEUM:

Opened in 1952, the museum is housed in a modern, light building, and exhibits objects from excavations undertaken in and around Paestum. Its most famous exhibit is the so-called Diver's TOmb. The name is taken from the superb painting, which has been much reproduced as it is a unique example of calssical Greek funerary art. other decorations on the tomb, which was found in 1968 half a mile from Paestum, represent convivial guests enjoying music and wine. One theory is that diver was an itinerant musician and, not being a local man, was given an unusual burial.


MOZZARELLA DI BUFALA:

Unlike cow's milk, buffalo's milk has no carotene, so the cheese it yields is whiter. It also has almost twice the fat of cow's milk, which produces a creamier cheese, and its flavor is more pronounced, a little gamier. To make Mozzarella di Bufala, the fresh milk is cultured with whey from the previous day's production and coagulated with rennet. After the curds form, they are allowed to ripen for several hours in their whey, then they are transferred to boiling water and heated until they are stretchable. Workers reach into the hot water and deftly mold the malleable curd into balls. The sooner it is eaten after that, the better. The residents around Naples pride themselves on their access to still-warm Mozzarella and say that by the time it gets to Rome, it is too old.
